Ingredients

  • 500 grams beef stew meat, cubed
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 cup milk
  • 2 tablespoons unsalted butter, melted

Directions

Step 1

In a large bowl, toss the beef stew meat with 3 tablespoons of flour to coat evenly.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef in batches to avoid overcrowding the pot. Set the browned beef aside on a plate.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes until the vegetables soften slightly.

Step 4

Stir in the tomato paste, then return the browned beef to the pot.

Step 5

Pour in the beef broth and Worcestershire sauce. Add the cubed potatoes, thyme, rosemary, bay leaf, salt, and pepper. Stir well to combine.

Step 6

Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 60-75 minutes, stirring occasionally, until the beef is tender and the flavors meld together.

Step 7

While the stew simmers, prepare the dumpling batter. In a medium bowl, whisk together 1 cup of flour, baking powder, and 1/4 teaspoon of salt. Stir in the milk and melted butter until a soft batter forms.

Step 8

After the stew has simmered and thickened to your liking, remove the bay leaf. Drop spoonfuls of the dumpling batter onto the surface of the simmering stew, leaving a little space between each dumpling.

Step 9

Cover the pot and let the dumplings cook for 15 minutes. Avoid lifting the lid to ensure the dumplings cook through and become light and fluffy.

Step 10

Once the dumplings are cooked, remove the pot from the heat and serve the stew and dumplings hot. Enjoy!
