Ingredients

  • 1 pound ground beef
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 2 medium, diced carrots
  • 1 medium, diced zucchini
  • 1 medium, diced red bell pepper
  • 1 cup frozen green beans
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 1 teaspoon dried oregano
  • 0.5 teaspoon chili flakes (optional)

Directions

Step 1

Heat a large skillet or saucepan over medium heat and add 2 tablespoons of olive oil.

Step 2

Add the diced onion and cook for 2-3 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the ground beef to the skillet. Cook, breaking it apart with a wooden spoon, for 5-7 minutes until browned and cooked through. Drain excess fat if necessary.

Step 5

Mix in the diced carrots, zucchini, red bell pepper, and frozen green beans. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.

Step 6

Add the tomato paste, soy sauce, paprika, ground black pepper, salt, oregano, and chili flakes (if using). Stir well to coat the vegetables and beef with the sauce and seasonings.

Step 7

Reduce the heat to low and let the mixture simmer for 5 minutes to allow the flavors to meld together.

Step 8

Taste and adjust seasoning if needed. Remove from heat and serve warm over rice, quinoa, or enjoy on its own.
