Ingredients

  • 150 grams Fresh strawberries
  • 150 grams Ripe mangoes (peeled and diced)
  • 100 grams Fresh blueberries
  • 50 grams Sugar (adjust based on fruit sweetness)
  • 250 ml Heavy whipping cream
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Gelatin powder
  • 3 tablespoons Cold water
  • 5 leaves Mint leaves (optional for garnish)

Directions

Step 1

Wash and pat dry all the fruits. Dice the strawberries and mangoes into small pieces. Leave the blueberries whole.

Step 2

Blend the strawberries, mangoes, and blueberries (reserving a few for garnish) in a blender until smooth. Strain the puree through a fine-mesh sieve to remove seeds or pulp if desired.

Step 3

In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for 5 minutes. Heat the bloomed gelatin in the microwave for 10-15 seconds until dissolved, or heat gently over a double boiler. Let it cool slightly.
