Ingredients

  • 1 piece pie crust (store-bought or homemade)
  • 1.5 cups strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup raspberries
  • 0.75 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 0.5 cup unsalted butter (cold, cubed)
  • 0.75 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.5 cup rolled oats
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Gently roll out your pie crust into a 9-inch pie pan, trimming and crimping the edges as needed. Refrigerate the crust while preparing the filling.

Step 3

In a large bowl, combine the strawberries, blueberries, raspberries, granulated sugar, cornstarch, and lemon juice. Stir until the berries are evenly coated. Set aside.

Step 4

In another bowl, prepare the streusel topping by combining flour, brown sugar, oats, cinnamon, and salt. Add the cold, cubed butter and, using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

Step 5

Pour the berry mixture into the chilled pie crust, spreading it evenly.

Step 6

Sprinkle the streusel topping evenly over the berry layer.

Step 7

Place the pie on a baking sheet (to catch any juices that might bubble over) and bake for 50-55 minutes, or until the filling is bubbly and the streusel topping is golden brown.

Step 8

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set.

Step 9

Slice and serve the pie as-is, or with a dollop of whipped cream or vanilla ice cream. Enjoy!
