Ingredients

  • 240 grams All-purpose flour
  • 25 grams Granulated sugar (for crust)
  • 1 teaspoon Salt
  • 170 grams Unsalted butter (cold, cubed)
  • 60 ml Ice water
  • 500 grams Mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 120 grams Granulated sugar (for filling)
  • 25 grams Cornstarch
  • 2 tablespoons Lemon juice
  • 4 Egg whites
  • 200 grams Granulated sugar (for meringue)
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Cream of tartar

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

In a large bowl, mix the flour, sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.

Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap it in cling film, and refrigerate for 30 minutes.

Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Trim the edges, tuck in the excess dough, and crimp decoratively. Prick the bottom of the crust with a fork and chill for 15 minutes.
