Ingredients

  • 1 cup couscous
  • 1 cup water
  • 0.25 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup strawberries
  • 0.5 cup blueberries
  • 0.5 cup raspberries
  • 0.25 cup slivered almonds
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2 tablespoons mint leaves

Directions

Step 1

In a medium-sized saucepan, bring 1 cup of water and 0.25 teaspoon of salt to a boil.

Step 2

Stir in 1 cup of couscous and 1 tablespoon of olive oil, then remove the saucepan from heat and cover with a lid. Let sit for 5 minutes.

Step 3

While the couscous is cooking, wash and hull 1 cup of strawberries. Chop them into bite-sized pieces.

Step 4

Rinse 0.5 cup of blueberries and 0.5 cup of raspberries. Pat them dry with a paper towel.

Step 5

Toast 0.25 cup of slivered almonds in a dry skillet over medium heat until golden and fragrant, about 2-3 minutes. Set aside to cool.

Step 6

In a small bowl, whisk together 2 tablespoons of lemon juice and 1 tablespoon of honey to create the dressing.

Step 7

Fluff the cooked couscous with a fork and transfer it to a large mixing bowl.

Step 8

Add the prepared strawberries, blueberries, raspberries, and toasted almonds to the couscous and gently toss to combine.

Step 9

Drizzle the lemon-honey dressing over the couscous mixture and toss again to ensure everything is evenly coated.

Step 10

Finely chop 2 tablespoons of fresh mint leaves and sprinkle them on top of the couscous salad for a burst of freshness.

Step 11

Refrigerate the salad for at least 15 minutes before serving to let the flavors meld together. Serve chilled or at room temperature.
