Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 0.75 cups unsalted butter
  • 1 cups granulated sugar
  • 3 pieces large eggs
  • 2 teaspoons vanilla extract
  • 0.5 cups whole milk
  • 2 cups mixed fresh berries (such as strawberries, blueberries, raspberries)
  • 1 teaspoons lemon zest
  • 2 tablespoons confectioners' sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt, then set aside.

Step 3

In a large mixing bowl, cream the unsalted butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 5 minutes.

Step 4

Add in the large eggs, one at a time, beating well with each addition. Mix in the vanilla extract and lemon zest.

Step 5

Gradually add the flour mixture to the butter mixture in three parts, alternating with the milk, beginning and ending with the flour mixture. Mix on low speed until just combined.

Step 6

Gently fold in the mixed fresh berries using a spatula, being careful not to crush them.

Step 7

Pour the batter into the prepared cake pan and spread it evenly using a spatula.

Step 8

Bake in the preheated oven for 45 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.

Step 10

Once cooled, dust the top with confectioners' sugar if desired before serving.

Step 11

Serve the berry cake warm or at room temperature. Enjoy!
