Ingredients

  • 400 g firm tofu
  • 2 tbsp white miso paste
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 stalks green onions (for garnish)
  • 1 tsp sesame seeds (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Press the tofu to remove excess moisture. Use a tofu press or wrap it in a clean kitchen towel and place a heavy pan on top for 15-20 minutes. Once pressed, cut the tofu into 1-inch cubes.

Step 3

In a small bowl, whisk together the white miso paste, soy sauce, maple syrup, toasted sesame oil, rice vinegar, minced garlic, and grated ginger until smooth.

Step 4

In another small bowl, mix the cornstarch and water to form a slurry, then add it to the miso mixture to slightly thicken the marinade.

Step 5

Place the tofu cubes in a shallow dish or bowl and pour the miso marinade over them. Toss gently to coat every piece evenly. Let the tofu marinate for at least 15 minutes, or up to 1 hour for more flavor.

Step 6

Arrange the marinated tofu cubes on the prepared baking sheet in a single layer, making sure they are not touching each other for even baking.

Step 7

Bake the tofu for 15 minutes, then flip the cubes and bake for another 15 minutes, or until golden brown and slightly crispy around the edges.

Step 8

Remove the tofu from the oven and let it cool for 5 minutes. Garnish with chopped green onions and sesame seeds if desired.

Step 9

Serve as a main dish with rice and steamed vegetables or as a protein topping for salads and grain bowls.
