Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon paprika
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1.5 cups chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried Italian seasoning

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and paprika.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add the unsalted butter to the skillet. Once melted, add the diced onion and cook for 3-4 minutes or until softened.
