Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 0.25 cup fresh mint leaves
  • 2 tablespoons honey
  • 3 tablespoons lime juice
  • 1 cup strawberries
  • 1 cup blueberries
  • 1 large mango
  • 2 medium kiwi
  • 1 cup pineapple

Directions

Step 1

Rinse the quinoa under cold water in a fine-mesh sieve to remove any bitterness.

In a medium saucepan, bring the 2 cups of water to a boil. Add the rinsed quinoa, lower the heat, cover, and let it simmer for 12-15 minutes, or until the water is absorbed and the quinoa is tender.
