Ingredients

  • 250 g haloumi
  • 100 g mixed salad greens
  • 150 g cherry tomatoes
  • 1 medium cucumber
  • 15 g fresh mint leaves
  • 1 large lemon
  • 3 tbsp olive oil
  • 1 tsp honey
  • 1 tsp black pepper
  • 0.5 tsp salt

Directions

Step 1

Slice the haloumi into 1 cm thick slices and set aside.

Step 2

Heat a non-stick frying pan over medium heat. Once hot, grill the haloumi slices for 2-3 minutes on each side until golden brown. Remove from heat and let it cool slightly.

Step 3

Rinse and pat dry the mixed salad greens. Place them in a large serving bowl or platter.

Halve the cherry tomatoes and slice the cucumber into thin rounds. Add both to the salad greens.

Finely chop the fresh mint leaves. Reserve a few whole leaves for garnish, and sprinkle the rest over the salad.
