Ingredients

  • 60 ml White wine vinegar
  • 60 ml Dry white wine
  • 2 Shallots, finely chopped
  • 2 tbsp Fresh tarragon leaves, chopped
  • 2 tbsp Fresh mint leaves, finely chopped
  • 3 Egg yolks
  • 150 g Unsalted butter, melted and warm
  • 1 tsp Lemon juice
  • 1 pinch Salt
  • 1 pinch White pepper

Directions

Step 1

In a small saucepan, combine the white wine vinegar, dry white wine, chopped shallots, and half of the fresh tarragon leaves. Bring to a boil over medium heat and reduce the liquid to about 2 tablespoons. Strain the mixture into a heatproof bowl and discard the solids.

Step 2

Set up a double boiler by placing the heatproof bowl over a pot of simmering water. Make sure the bottom of the bowl does not touch the water.

Step 3

Whisk the egg yolks into the reduced liquid until smooth. Continue whisking constantly until the mixture thickens and becomes pale, about 2-3 minutes.

Step 4

Gradually drizzle in the melted butter while whisking continuously. Do this slowly to ensure the sauce emulsifies properly.

Step 5

Once all the butter is incorporated, remove the bowl from the heat. Stir in the remaining chopped tarragon, mint, lemon juice, salt, and white pepper.

Step 6

Taste and adjust seasoning if necessary. Serve immediately or keep warm over a double boiler for up to 30 minutes before serving.
