  • 4 medium-sized fresh beets
  • 2 tablespoons olive oil
  • 1 cup, loosely packed fresh mint leaves

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the beets thoroughly to remove any dirt. Trim off the tops and roots, but do not peel them.

Place the whole beets on a sheet of aluminum foil. Drizzle with 1 tablespoon of olive oil and wrap them in the foil to create a sealed packet.
