Ingredients

  • 2 tablespoons Green tea leaves (preferably Chinese gunpowder green tea)
  • 1 large bunch Fresh mint leaves
  • 4 tablespoons Granulated sugar
  • 4 cups Water

Directions

Step 1

Boil 4 cups of water in a kettle and let it cool slightly for 1-2 minutes; the water should be hot but not at a rolling boil to preserve the delicate flavors of the green tea.

Step 2

Add 2 tablespoons of green tea leaves to a teapot. Pour about 1/2 cup of hot water into the teapot to rinse the tea leaves. Swirl the water around to remove any bitterness or dust, then carefully pour out the water without losing the tea leaves.

Step 3

Add 4 tablespoons of granulated sugar to the teapot along with the large bunch of fresh mint leaves. You can gently bruise the mint leaves with your hands to release more of their aroma, if desired.

Step 4

Pour the remaining 3 1/2 cups of hot water into the teapot over the tea leaves, sugar, and mint. Stir briefly with a long spoon to help the sugar dissolve.

Step 5

Place the lid on the teapot and let the tea steep for 3-5 minutes, depending on how strong you like your tea.
