Ingredients

  • 4 large Russet potatoes
  • 1 cup Frozen peas
  • 15 leaves Fresh mint leaves
  • 4 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 2 cloves Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks for even cooking.

Step 2

Add the potatoes to a large pot and cover with cold water. Add a pinch of salt and bring the pot to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

While the potatoes are cooking, bring a small pot of water to a boil. Add the peas and cook for 2-3 minutes until tender but still vibrant green. Drain and set aside.

Step 4

In a small skillet, heat the olive oil over low heat. Add the garlic cloves and sauté for 1 minute until fragrant but not browned. Remove from heat.

Step 5

In a blender or food processor, combine the cooked peas, mint leaves, sautéed garlic, and 1 tablespoon of the butter. Blend until smooth, adding a splash of water if needed for consistency. Set aside.

Step 6

Once the potatoes are cooked, drain them and return them to the hot pot. Let them sit for a minute to allow excess moisture to evaporate.

Step 7

Mash the potatoes with a potato masher or ricer until smooth.

Step 8

Stir in the remaining butter, heavy cream, salt, and black pepper. Mix until the mashed potatoes are creamy and well-combined.

Step 9

Fold the pea and mint puree into the mashed potatoes until evenly distributed, adjusting seasonings to taste if needed.

Step 10

Serve the Mint Peas Mashed Potatoes warm, garnished with an extra sprig of mint if desired.
