Ingredients

  • 200 grams All-purpose flour
  • 150 grams Unsalted butter (cold, diced)
  • 100 grams Brown sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 units Egg yolks
  • 1 tablespoon Water (cold)
  • 150 grams Almond paste
  • 1 teaspoon Honey
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt.

Add the cold, diced butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the mixture until it resembles coarse crumbs.

In a small bowl, whisk together the egg yolks and cold water. Gradually add this to the flour mixture, stirring until a soft dough forms.

Wrap the dough in plastic wrap and refrigerate for 20 minutes to chill.

Top with another dough circle, pressing the edges gently to seal. Use a fork to crimp the edges for decoration if desired.

Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown.

Remove the treats from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Once cooled, dust the tops with powdered sugar before serving.
