Ingredients

  • 6 mini zucchinis
  • 6 cherry tomatoes
  • 0.5 cup bell pepper (any color, finely diced)
  • 0.5 cup baby spinach (chopped)
  • 0.25 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 clove garlic (minced)
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the zucchinis and cherry tomatoes thoroughly. Cut each zucchini in half lengthwise and hollow out the centers using a small spoon or melon baller to create mini boats. Set the scooped-out flesh aside.

Step 3

Finely chop the scooped-out zucchini flesh and add it to a mixing bowl. Cut the cherry tomatoes into quarters and add to the bowl along with the diced bell pepper and chopped spinach.

In a small pan, heat olive oil over medium heat and sauté the minced garlic for 1 minute until fragrant. Add the zucchini mixture to the pan and cook for about 3-4 minutes, or until the vegetables slightly soften.
