Ingredients

  • 1 sheet puff pastry sheet
  • 18 pieces cherry tomatoes
  • 9 leaves fresh basil leaves
  • 120 grams shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic glaze
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon all-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Lightly dust a clean surface with flour and roll out the puff pastry sheet to slightly thin it out.

Step 3

Using a 7.5 cm (3-inch) round cookie cutter, cut out 9 circles from the puff pastry. Place the circles on the prepared baking sheet.

Step 4

Score a smaller circle about 0.5 cm (1/4 inch) inside the edge of each pastry circle to create a border. Be careful not to cut all the way through the pastry.

Step 5

Pierce the center area of each pastry circle with a fork a few times to prevent it from puffing up too much during baking.

Slice the cherry tomatoes in half and set them aside.

Place about 1 teaspoon of shredded mozzarella cheese in the center of each pastry circle, staying within the scored border.
