Ingredients

  • 250 grams all-purpose flour
  • 1 teaspoon salt
  • 50 grams ghee or clarified butter
  • 100 milliliters warm water
  • 200 grams potatoes
  • 50 grams green peas
  • 1 piece green chili, finely chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 2 tablespoons fresh coriander leaves, chopped
  • 500 milliliters oil for frying
  • 0.5 teaspoon salt

Directions

Step 1

In a bowl, mix the all-purpose flour and salt together.

Step 2

Add the ghee to the flour and rub it with your fingers until the mixture resembles breadcrumbs.

Step 3

Add warm water gradually and knead into a firm dough. Cover and let it rest for 20 minutes.

Step 4

Boil the potatoes until tender. Peel and dice them into small cubes.

In a pan over medium heat, add cumin seeds. Once they start to sizzle, add the grated ginger and green chili.

Add the diced potatoes and green peas, then stir continuously.
