Ingredients

  • 250 grams All-purpose flour
  • 1 teaspoon Salt
  • 2 tablespoons Oil for dough
  • 120 milliliters Water
  • 4 Large onions
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt for filling
  • 2 tablespoons Chopped fresh cilantro
  • 1 tablespoon Lemon juice
  • 500 milliliters Oil for frying

Directions

Step 1

In a bowl, mix the all-purpose flour and 1 teaspoon of salt. Add in 2 tablespoons of oil and rub it into the flour until the mixture is crumbly.

Step 2

Gradually add 120 milliliters of water to the flour mixture, kneading until a smooth dough is formed. Cover with a damp cloth and set aside for at least 20 minutes.

Step 3

While the dough rests, peel and finely chop the onions. Heat a little oil in a skillet over medium heat.

Step 4

Add the chopped onions to the skillet and sauté for 5-7 minutes or until they become translucent.

Step 5

Stir in the ground cumin, ground coriander, red chili powder, turmeric powder, and 1 teaspoon of salt, cooking for an additional 2 minutes.

Step 6

Remove the skillet from heat and mix in chopped cilantro and lemon juice. Allow the onion mixture to cool completely.

Step 7

Divide the rested dough into small lemon-sized balls. Roll each ball into a thin circle, approximately 5 inches in diameter.

Step 8

Cut each circle in half to form two semicircles. Take one semicircle, fold it into a cone by sealing the edge with a bit of water.

Step 9

Fill the cone with 1-2 teaspoons of the onion mixture. Seal the top of the filled cone by pressing the edges firmly.

Step 10

Heat 500 milliliters of oil in a deep frying pan over medium heat.

Step 11

Once the oil is hot enough, gently slide in 4-5 samosas at a time, frying them until golden brown and crispy.

Step 12

Remove the samosas with a slotted spoon and place them on paper towels to drain excess oil.

Step 13

Serve warm with your favorite chutney or sauce.
