Ingredients

  • 8 Flour tortillas (small, taco-sized)
  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 1 cup Refried beans
  • 2 cups Shredded Mexican blend cheese
  • 1 cup Salsa
  • 0.5 cup Sour cream
  • 0.25 cup Chopped green onions
  • 0.5 cup Diced tomatoes
  • 0.25 cup Sliced black olives
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Lightly spray a large baking sheet with cooking spray or line it with parchment paper.

Step 3

In a large skillet over medium heat, cook the ground beef until browned, breaking it into small crumbles with a spatula. Drain any excess grease.

Step 4

Add the taco seasoning to the skillet along with about 1/4 cup of water (or as instructed on the taco seasoning packet). Stir and cook for 2-3 minutes until the beef is well-coated and the seasoning is fully absorbed. Set aside.

Step 5

Place the flour tortillas on the prepared baking sheet. If necessary, stack them slightly to fit.

Step 6

Spread about 1-2 tablespoons of refried beans evenly onto each tortilla, creating a thin base layer.

Step 7

Add a layer of the seasoned ground beef on top of the refried beans, using approximately 2-3 tablespoons per tortilla.

Step 8

Sprinkle a generous amount of shredded Mexican blend cheese over the beef layer (about 2-3 tablespoons per tortilla).

Step 9

Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the edges of the tortillas are golden and crisp.

Step 10

Remove the pizzas from the oven and let them cool for 1-2 minutes.

Step 11

Top each mini pizza with a spoonful of salsa, a dollop of sour cream, and a sprinkle of chopped green onions, diced tomatoes, and sliced black olives.

Step 12

Serve the mini Mexican pizzas warm and enjoy!
