Ingredients

  • 1 pound Ground beef (85% lean)
  • 1 cup Breadcrumbs
  • 0.25 cup Milk
  • 0.5 cup Onion, finely chopped
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup Ketchup
  • 1 teaspoon Yellow mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line it with silicone liners.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, egg, minced garlic, Worcestershire sauce, salt, black pepper, and parsley if using. Mix until well combined, but do not overmix to avoid tough meatloaf.

Step 3

Divide the meat mixture evenly among the muffin tin cups, pressing gently to pack each one in tightly.

Step 4

In a small bowl, stir together the ketchup and mustard to make the topping glaze.

Step 5

Spoon the glaze evenly over the tops of each meatloaf muffin, spreading it with the back of the spoon if needed.

Step 6

Bake the muffins in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (71°C).

Step 7

Remove the muffin tin from the oven and let the meatloaf muffins rest for about 5 minutes before carefully removing them from the tin.

Step 8

Serve warm, paired with mashed potatoes, roasted vegetables, or a side salad for a complete meal.
