Ingredients

  • 1 pound Ground beef (80/20 blend)
  • 1 teaspoon Kosher salt
  • 1 tablespoon Vegetable oil
  • 1 whole Small yellow onion
  • 1 tablespoon Unsalted butter
  • 0.5 cup Dill pickles, sliced
  • 6 slices American cheese slices
  • 6 whole Mini burger buns
  • 0.5 teaspoon Freshly ground black pepper

Directions

Step 1

Finely dice the yellow onion.

Step 2

In a skillet over medium heat, melt the butter and add the diced onion. Cook for 6-8 minutes, stirring occasionally, until the onions are soft and caramelized. Remove from the skillet and set aside.

Step 3

Divide the ground beef into 6 even portions and shape into small patties approximately 2 inches in diameter and 1/2 inch thick. Season each patty with kosher salt and black pepper on both sides.

In the same skillet, heat the vegetable oil over medium-high heat. When the oil is shimmering, add the patties to the skillet. Cook for 2-3 minutes on the first side without pressing down.
