Ingredients

  • 100 grams Unsalted butter (softened)
  • 100 grams Caster sugar
  • 100 grams Ground almonds
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 150 grams Plain flour
  • 75 grams Chilled unsalted butter (cubed)
  • 50 grams Icing sugar
  • 2 tablespoons Cold water
  • 3 tablespoons Apricot jam
  • 25 grams Flaked almonds

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a 12-hole tart tin.

Step 2

To make the pastry, combine the plain flour and chilled butter in a bowl. Rub the butter into the flour with your fingertips until it resembles fine breadcrumbs.

Step 3

Mix in the icing sugar, then add the cold water one tablespoon at a time. Use a butter knife to bring the dough together, then transfer it to a lightly floured surface and knead gently until smooth.

Wrap the pastry in cling film and chill in the refrigerator for 20 minutes.

While the pastry chills, prepare the frangipane filling. In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy.
