Ingredients

  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 60 grams Unsalted butter, cold and diced
  • 100 grams Cheddar cheese, grated
  • 120 milliliters Milk
  • 1 unit Egg, large
  • 1 tablespoon Chives, finely chopped (optional)
  • 20 grams Extra grated cheddar (for topping)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, and salt.

Add the cold, diced butter to the bowl. Using a pastry cutter or your fingertips, rub the butter into the flour mixture until it resembles coarse breadcrumbs.

Stir in the grated cheddar cheese and chopped chives (if using).

In a small bowl, whisk together the milk and egg. Reserve about 1 tablespoon of the mixture for brushing the tops of the scones later.
