Ingredients

  • 2 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 2 Large eggs
  • 3 quarters of a cup Whole milk
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Unsalted butter, melted
  • 3 cups Vegetable oil for frying
  • 0.5 cup Powdered sugar, for dusting

Directions

Step 1

In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Step 2

In another bowl, beat the eggs and add the milk, vanilla extract, and melted butter, mixing until combined.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring with a spatula or wooden spoon just until no streaks of flour remain. Be careful not to overmix.

Step 4

Heat the vegetable oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C).

Step 5

Carefully drop tablespoon-sized dollops of the batter into the hot oil, working in batches to avoid overcrowding.

Step 6

Fry the beignets for 2 to 3 minutes on each side, or until they are puffed and golden brown.

Step 7

Use a slotted spoon to remove the beignets from the oil, letting them drain on a plate lined with paper towels.

Step 8

While still warm, dust the beignets generously with powdered sugar using a fine-mesh sieve or sifter.

Step 9

Serve immediately and enjoy the deliciously fluffy mini beignets!
