  • 6 cups Vegetable broth
  • 15 ounces Canned cannellini beans, drained and rinsed
  • 15 ounces Canned red kidney beans, drained and rinsed
  • 1 cup Dried pasta (small shapes like ditalini or macaroni)
  • 2 cups Fresh spinach leaves, chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat olive oil in a large soup pot over medium heat.

Add the diced onion, celery, and carrots. Sauté for 5-7 minutes until the vegetables are softened.
