Ingredients

  • 225 grams Unsalted butter (softened)
  • 200 grams All-purpose flour
  • 50 grams Granulated sugar
  • 1 can (397 grams) Sweetened condensed milk
  • 100 grams Light brown sugar
  • 2 tablespoons Golden syrup (or light corn syrup)
  • 200 grams Dark chocolate
  • 2 tablespoons Heavy cream
  • 1 pinch Sea salt (optional for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 9x9-inch (23x23 cm) baking pan with parchment paper.

Step 2

In a medium bowl, cream together 125 grams of the softened butter and granulated sugar until light and fluffy. Gradually mix in the all-purpose flour to form a dough.

Step 3

Press the shortbread dough evenly into the bottom of the prepared pan. Prick the surface with a fork to allow steam to escape as it bakes.

Step 4

Bake the shortbread base in the preheated oven for 20 minutes or until light golden. Remove and let it cool in the pan while you prepare the caramel layer.

In a medium saucepan, combine the remaining 100 grams of butter, light brown sugar, golden syrup, and the sweetened condensed milk. Heat over medium-low, stirring constantly until the sugar dissolves.

Increase the heat to medium and bring the caramel mixture to a gentle boil. Stir continuously for 8-10 minutes, or until thickened and golden. Be careful not to let it burn.

Pour the hot caramel over the cooled shortbread base and spread it evenly. Allow it to cool completely and set (you can refrigerate it to speed up the process).
