  • 6 pieces Corn tortillas
  • 3 tablespoons Vegetable oil
  • 6 pieces Eggs
  • 2 tablespoons Milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 small, diced Onion
  • 1 medium, diced Red bell pepper
  • 1 small, diced (optional) Jalapeño
  • 1 medium, diced Tomato
  • 0.5 cups, shredded Cheddar cheese
  • 2 tablespoons, chopped Fresh cilantro
  • 1 cut into wedges Lime

Directions

Step 1

Cut the corn tortillas into small strips (about 1 inch wide by 2 inches long).

Step 2

Heat the vegetable oil in a large skillet over medium heat. Once hot, add the tortilla strips in batches and fry until crispy and golden, about 2-3 minutes per batch. Remove the strips from the skillet and drain on a plate lined with paper towels.

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Using the same skillet, remove excess oil, leaving about 1-2 teaspoons. Add the diced onion, red bell pepper, and jalapeño (if using). Sauté over medium heat until softened, about 3-4 minutes.
