Ingredients

  • 500 grams Ground lamb or beef (or a 50/50 mix)
  • 1 medium Yellow onion, finely grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil (for brushing)
  • 4 pieces Pita bread or flatbread (optional, for serving)
  • 0 to taste Tahini sauce or yogurt sauce (optional, for serving)

Directions

Step 1

In a large mixing bowl, combine the ground lamb or beef, grated onion, minced garlic, chopped parsley, ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper. Mix thoroughly using your hands or a wooden spoon until the mixture is well-combined.

Step 2

Divide the mixture into 8 equal portions and shape each portion into a long, cylindrical kebab shape. If using skewers, gently thread each kebab onto a skewer. If not using skewers, shape the kebabs so they can be cooked directly on the grill or pan.

Step 3

Place the shaped kebabs on a plate or tray, cover with plastic wrap, and refrigerate for at least 30 minutes. This helps the kebabs hold their shape during cooking.

Step 4

Preheat a grill, grill pan, or skillet over medium-high heat. Lightly oil the cooking surface with a pastry brush or paper towel dipped in olive oil.

Step 5

Cook the kebabs for 3–4 minutes per side, turning gently to ensure even cooking. The kebabs should be browned on the outside and fully cooked through on the inside.

Step 6

Remove the kebabs from the heat and let them rest for 2–3 minutes before serving.

Step 7

Serve the kebabs hot with warm pita bread or flatbread, and alongside tahini sauce or yogurt sauce, if desired.
