Ingredients

  • 2 cups Rolled oats
  • 0.3333 cup Honey or maple syrup
  • 2 tablespoons Coconut oil or melted butter
  • 2 tablespoons Brown sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon (optional)
  • 0.25 teaspoon Salt
  • 0.5 cup Chopped nuts, seeds, or dried fruit (optional)

Directions

Step 1

In a large microwave-safe bowl, combine the rolled oats, brown sugar, cinnamon (if using), and salt. Mix well.

Step 2

In a small microwave-safe dish, heat the coconut oil or butter and honey or maple syrup in the microwave for 20-30 seconds, or until melted and easily mixable.

Step 3

Stir the vanilla extract into the warmed liquid mixture, then pour over the dry ingredients in the large bowl. Mix everything thoroughly to ensure all the oats are coated.

Step 4

Spread the mixture evenly on a microwave-safe plate lined with parchment paper. Keep it slightly loose for even cooking.

Step 5

Microwave the granola on high for 2 minutes, then stir it gently to prevent clumping. Spread it back out evenly.

Step 6

Microwave for an additional 2-3 minutes in 30-second intervals, stirring after each interval to check for doneness. The granola is ready when it turns golden brown and smells fragrant. Be careful not to burn it.

Step 7

Remove the granola from the microwave and let it cool completely on the plate. It will crisp up as it cools.

Step 8

If desired, stir in chopped nuts, seeds, or dried fruit once the granola has cooled.

Step 9

Store the granola in an airtight container for up to a week and enjoy as a topping for yogurt, with milk, or as a snack.
