Ingredients

  • 1 cup Basmati rice
  • 1.5 cups Water
  • 200 grams Chicken (boneless, cut into small pieces)
  • 0.25 cup Yogurt (plain)
  • 1 medium Onion (thinly sliced)
  • 1 medium Tomato (finely chopped)
  • 1 tablespoon Ginger-garlic paste
  • 1 tablespoon Biriyani masala
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 2 tablespoons Fresh coriander leaves (chopped)
  • 2 tablespoons Fresh mint leaves (chopped)
  • 2 tablespoons Cooking oil
  • 1 teaspoon Salt
  • 5 strands Saffron strands (optional)
  • 1 tablespoon Milk (warm, for saffron)

Directions

Step 1

Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.

Step 2

In a microwave-safe bowl, mix the chicken pieces with yogurt, ginger-garlic paste, biriyani masala, turmeric powder, red chili powder, and 0.5 teaspoon of salt. Cover and marinate for at least 15 minutes.

While the chicken marinates, soak the saffron strands in warm milk if you're using them and set aside.

In a large microwave-safe bowl, add the sliced onions and oil. Microwave on high for 4-5 minutes, stirring halfway, until the onions are golden brown.
