Ingredients

  • 2 cups Greek yogurt
  • 1 medium Cucumber
  • 1 large Lime
  • 0.5 cup Fresh cilantro
  • 1 small Jalapeño
  • 1 large Garlic clove
  • 2 tablespoons Extra-virgin olive oil
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and peel the cucumber. Cut it in half lengthwise and scoop out the seeds with a spoon. Grate the cucumber using a box grater and place it in a clean kitchen towel. Squeeze out as much excess water as possible to prevent the tzatziki from being watery.

Step 2

Finely chop the cilantro and jalapeño. If you prefer less heat, remove the seeds and membranes from the jalapeño before chopping.

Using a microplane or fine grater, grate the garlic clove into a paste.
