Preheat the oven to 375°F (190°C).
Cut the corn tortillas into thin strips, about 1/2 inch wide.
Toss the tortilla strips with 1 tablespoon of olive oil and spread them out on a baking sheet in a single layer.
Bake the tortilla strips for 8-10 minutes, tossing halfway through, until they're golden and crispy. Remove from oven and set aside to cool.
