Ingredients

  • 4 pieces corn on the cob, husks removed
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.5 cup grated cotija cheese
  • 1 piece lime, cut into wedges
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon chili powder
  • 2 tablespoons unsalted butter, melted
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your grill to medium-high heat or approximately 400°F (200°C).

Step 2

Brush each corn cob with the melted butter and sprinkle lightly with salt.

Step 3

Place the corn directly on the grill grates. Grill for 12-15 minutes, turning every few minutes to ensure the corn is evenly charred.

Step 4

While the corn is grilling, prepare the topping mixture. In a small bowl, combine mayonnaise, sour cream, and 1/4 cup of the grated cotija cheese.

Step 5

Once the corn is grilled to your desired charred level, remove it from the grill and let it cool slightly.

Step 6

Using a spoon or brush, spread the mayonnaise-sour cream mixture evenly over each corn cob.

Step 7

Sprinkle the remaining grated cotija cheese generously over the coated corn.

Step 8

Dust the corn with chili powder and garnish with chopped cilantro.

Step 9

Serve immediately with lime wedges on the side for squeezing over the corn.
