Ingredients

  • 4 cups fresh corn kernels (from about 4 ears of corn or 4 cups frozen, thawed)
  • 0.5 cups mayonnaise
  • 0.5 cups sour cream
  • 0.75 cups cotija cheese, crumbled
  • 1 large lime (zested and juiced)
  • 0.25 cups fresh cilantro, chopped
  • 1 small jalapeño, finely diced (optional)
  • 1 teaspoons chili powder or Tajín seasoning
  • 0.5 teaspoons garlic powder
  • 1 tablespoons olive oil
  • 1 bag tortilla chips or sliced vegetables (for serving)

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil.

Step 2

Add the corn kernels to the skillet and cook, stirring occasionally, until the corn is lightly charred, about 8–10 minutes. Remove from heat and allow to cool slightly.

Step 3

In a large mixing bowl, combine the mayonnaise, sour cream, lime juice, lime zest, chili powder, garlic powder, and half of the cotija cheese. Stir to combine.

Step 4

Fold the charred corn into the mayonnaise mixture. Add in the chopped cilantro and diced jalapeño, if using.

Step 5

Transfer the mixture to a serving dish or bowl. Sprinkle the remaining cotija cheese and a little extra chili powder or Tajín seasoning on top for garnish.

Step 6

Serve the dip warm or at room temperature with tortilla chips or sliced vegetables for dipping.
