Ingredients

  • 500 g Chorizo sausage
  • 8 pieces Flour tortillas
  • 2 tbsp Olive oil
  • 1 medium, diced Onion
  • 1 medium, diced Red bell pepper
  • 2 minced Garlic cloves
  • 2 medium, diced Tomatoes
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp, chopped Fresh cilantro
  • 1 cut into wedges Lime
  • 2 cups Shredded lettuce
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

Remove the chorizo sausage from its casing (if necessary) and add it to the skillet. Cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 8-10 minutes. Transfer the cooked sausage to a plate and set aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the skillet. Add the diced onion and red bell pepper, cooking for 4-5 minutes until they soften slightly.

Stir in the minced garlic and cook for another 1 minute until fragrant.
