Ingredients

  • 3 lbs Pork shoulder (boneless)
  • 2 tbsp Olive oil
  • 1 medium (diced) Onion
  • 4 minced Garlic cloves
  • 2 peppers Chipotle peppers in adobo sauce
  • 2 tsp Cumin
  • 1 tsp Oregano
  • 1.5 tsp Chili powder
  • 1 tsp Paprika
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 0.5 cups Orange juice
  • 2 tbsp Lime juice
  • 0.5 cups Chicken broth
  • 2 tbsp Cilantro (optional, for garnish)

Directions

Step 1

Trim excess fat from the pork shoulder and pat it dry with paper towels.

Step 2

In a small bowl, mix together cumin, oregano, chili powder, paprika, salt, and black pepper.

Rub the spice mix evenly over the pork shoulder.

Heat olive oil in a large skillet over medium-high heat. Sear the pork shoulder on all sides until browned, about 3-4 minutes per side. Remove from heat and set aside.

Once cooked, use two forks to shred the pork directly in the crock pot. Mix it with the juices for maximum flavor.
