Ingredients

  • 2 lbs ground beef
  • 0.5 lbs ground pork
  • 1 medium onion, finely chopped
  • 1 medium jalapeño, finely chopped
  • 1 medium red bell pepper, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 large eggs
  • 3 tbsp tomato paste
  • 1 cup Mexican-style shredded cheese
  • 0.25 cup cilantro, chopped
  • 1 tsp cumin
  • 1.5 tsp chili powder
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup ketchup
  • 2 tsp hot sauce (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x5-inch loaf pan.

Step 2

In a small mixing bowl, combine the breadcrumbs and milk. Set aside to allow the breadcrumbs to soak up the liquid.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, jalapeño, red bell pepper, minced garlic, eggs, and soaked breadcrumbs.

Step 4

Add the tomato paste, shredded cheese, chopped cilantro, cumin, chili powder, paprika, salt, and black pepper to the meat mixture. Mix thoroughly with your hands or a spatula until evenly combined.

Step 5

Transfer the mixture into the prepared loaf pan and press gently to form an even surface.

Step 6

In a separate bowl, mix the ketchup and optional hot sauce. Spread this glaze evenly over the top of the meatloaf.

Step 7

Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 8

Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 9

Serve warm with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh salad.
