Ingredients

  • 12 oz elbow macaroni
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic cloves, minced
  • 14.5 oz diced tomatoes, canned
  • 8 oz tomato sauce
  • 2 tbsp taco seasoning
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 small jalapeño, sliced (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute.

Step 3

Add the ground beef to the skillet. Cook, breaking up the meat with a wooden spoon, until fully browned and no longer pink, about 6-8 minutes. Drain any excess fat.

Step 4

Stir in the taco seasoning, chili powder, cumin, salt, and black pepper. Mix well to coat the beef evenly.

Step 5

Pour in the diced tomatoes (with their juice) and tomato sauce. Stir to combine. Reduce the heat to low and let the mixture simmer for 5 minutes.

Step 6

Add the cooked macaroni to the skillet and stir until the pasta is fully coated in the sauce.

Step 7

Remove the skillet from heat. Stir in the shredded cheddar cheese and the sour cream until melted and creamy.

Step 8

Garnish with chopped cilantro and sliced jalapeño, if desired. Serve hot.
