Ingredients

  • 1 pound ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves minced garlic
  • 2 tablespoons taco seasoning
  • 1 14-ounce can canned diced tomatoes with green chilies
  • 1 15-ounce can canned black beans, drained and rinsed
  • 1 15-ounce can canned corn, drained
  • 8 pieces flour tortillas (8-inch size)
  • 3 cups Mexican blend shredded cheese
  • 1 cup sour cream
  • 2 tablespoons chopped fresh cilantro (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute.

Step 3

Add the ground beef or turkey to the skillet. Cook until browned and crumbled, about 5-7 minutes. Drain off any excess grease, if necessary.

Step 4

Stir in the taco seasoning, canned diced tomatoes with green chilies, black beans, and corn. Allow the mixture to simmer for 5 minutes, stirring occasionally. Remove from heat.

Step 5

Spread a thin layer of the meat mixture on the bottom of the prepared baking dish. Place a layer of tortillas on top, tearing them as needed to create an even layer that covers the dish completely.

Step 6

Spread one-third of the meat mixture over the tortillas, then sprinkle one-third of the shredded cheese over the meat mixture.

Step 7

Repeat the layering process (tortillas, meat mixture, cheese) two more times, ending with a generous layer of shredded cheese on top.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the Mexican Lasagna from the oven and let it rest for 5-10 minutes before serving.

Step 10

Optionally, garnish with sour cream and chopped cilantro. Slice and serve warm.
