Ingredients

  • 2 cups Masa harina
  • 1.5 cups Water
  • 0.5 teaspoons Salt
  • 1 cup Refried beans
  • 0.5 cups Vegetable oil
  • 1 cup Cooked steak or chicken (shredded or diced)
  • 0.5 cup Queso fresco (crumbled)
  • 1 cup Lettuce (shredded)
  • 0.25 cup Crema Mexicana (or sour cream)
  • 0.5 cup Salsa of choice
  • 2 tablespoons Chopped cilantro (optional)

Directions

Step 1

In a mixing bowl, combine masa harina and salt. Gradually add water while stirring until a soft dough forms. The dough should be moist but not sticky. Adjust water quantity if needed.

Divide the dough into 4 equal portions, and roll each into a ball.

Flatten each ball into an oval shape about 1/4 inch thick (4-6 inches in length). If the dough sticks to your hands, dampen them slightly with water.

Heat a dry skillet or griddle over medium heat. Cook each masa oval for 2-3 minutes on each side until lightly browned and slightly puffed. Remove and set aside to cool slightly.

Using the back of a spoon, press along the center of each oval to create a shallow depression for the toppings.
