  • 1 cup frozen corn
  • 2 cups shredded Mexican cheese blend
  • 1 package refrigerated pie crusts (for a 9-inch pie)
  • 1 large egg, beaten
  • 2 tbsp chopped cilantro (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a large skillet over medium-high heat, heat the olive oil. Add the diced onion and garlic, cooking until softened and fragrant, about 3 minutes.
