  • 1 cup white rice
  • 2 cups water
  • 1 cup fresh spinach

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

In a blender, combine the spinach, cilantro, parsley, poblano pepper (seeded and diced), green onions, garlic cloves, and 1/2 cup of water. Blend until smooth and set aside.
