  • 1 Jalapeño (seeded and finely chopped)
  • 1 Avocado (diced)
  • 1 cup Cucumber (peeled, seeded, and diced)
  • 2 Roma tomatoes (diced)
  • 1 tbsp Olive oil
  • 1 tsp Sea salt
  • 0.5 tsp Cracked black pepper
  • 1 bag Tortilla chips (for serving)

Directions

Step 1

Bring a medium pot of water to a boil and add a pinch of salt. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp with a slotted spoon, transfer to an ice bath to stop cooking, then drain and set aside.
