Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Taco seasoning
  • 4 ounces Cream cheese
  • 1 cup Shredded Monterey Jack cheese
  • 8 pieces Flour tortillas
  • 1 cup Salsa
  • 2 tablespoons Chopped fresh cilantro
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garlic powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Season the chicken breasts with taco seasoning, cumin powder, garlic powder, salt, and black pepper.

Step 3

Heat the vegetable oil in a skillet over medium heat. Add the seasoned chicken and cook for about 6-8 minutes per side, or until fully cooked through. Remove from heat and let cool slightly.

Step 4

Shred the cooked chicken using two forks and place it in a mixing bowl.

Step 5

Add cream cheese, 1/2 cup of shredded Monterey Jack cheese, and chopped cilantro to the shredded chicken. Mix until well combined.

Step 6

Lay a flour tortilla flat and spoon about 1/4 cup of the chicken mixture onto the center of the tortilla. Roll the tortilla tightly and place seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.

Step 7

Top the rolled tortillas with the salsa, spreading it evenly. Sprinkle the remaining 1/2 cup of shredded Monterey Jack cheese over the top.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 9

Remove from the oven and let cool for a few minutes before serving.

Step 10

Serve the Mexican Chicken Rolls with additional salsa, sour cream, or guacamole if desired. Enjoy!
