Ingredients

  • 2 pieces Chicken breast
  • 8 cups Chicken broth
  • 2 tablespoons Olive oil
  • 1 medium (diced) White onion
  • 4 (minced) Garlic cloves
  • 1 (seeded and diced) Jalapeño
  • 2 (diced) Tomato
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon (adjust to taste) Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons (freshly squeezed) Lime juice
  • 1 cup (fried or baked) Corn tortilla strips
  • 0.25 cup (chopped, for garnish) Cilantro
  • 1 (sliced, for garnish) Avocado
  • 4 (for serving) Lime wedges

Directions

Step 1

Season the chicken breasts with a pinch of salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large soup pot over medium heat. Add the chicken breasts and cook for 3–4 minutes per side, or until lightly browned. Remove the chicken and set aside.

Step 3

In the same pot, heat the remaining 1 tablespoon of olive oil. Add the diced onion, garlic, and jalapeño. Sauté for 3–4 minutes, or until the onion becomes translucent and fragrant.

Step 4

Stir in the diced tomatoes, cumin, and dried oregano. Cook for another 2–3 minutes to combine the flavors.

Step 5

Pour in the chicken broth and bring the mixture to a simmer.

Step 6

Return the seared chicken breasts to the pot. Cover the pot and let the soup simmer for 15–20 minutes, or until the chicken is fully cooked and tender.

Step 7

Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup.

Step 8

Stir in the freshly squeezed lime juice and let the soup simmer for an additional 2 minutes. Adjust the salt and pepper to taste.

Step 9

To serve, ladle the soup into bowls. Top with crispy tortilla strips, chopped cilantro, avocado slices, and a lime wedge on the side for extra freshness.
