Ingredients

  • 3 cups Shredded cooked chicken
  • 2 cups Salsa (mild, medium, or hot)
  • 1 can Refried beans
  • 2 tablespoons Taco seasoning
  • 12 pieces Corn tortillas
  • 3 cups Shredded Mexican blend cheese
  • 1 cup Sour cream
  • 0.5 cup Chopped cilantro (optional)
  • 1 can Diced green chiles (optional)
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray.

In a medium bowl, mix the shredded chicken with salsa and taco seasoning. If using green chiles, stir them in as well.

Warm the refried beans slightly in the microwave or on the stovetop to make them easier to spread.

Place 4 corn tortillas on the bottom of the prepared baking dish, overlapping as needed to cover the entire surface.
