Ingredients

  • 4 pieces large flour tortillas
  • 6 large eggs
  • 250 grams chorizo
  • 1 cup black beans
  • 1 cup cheddar cheese, shredded

  • 1 small yellow onion, diced
  • 1 piece jalapeño, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt

  • 1 piece avocado, sliced
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 cup salsa

Directions

Step 1

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo and cook for 5-7 minutes or until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the diced onion, red bell pepper, and jalapeño for 3-4 minutes, or until softened.
