Ingredients

  • 8 oz cream cheese
  • 1 cup sour cream
  • 2 cups Mexican cheese blend (shredded)
  • 10 oz diced tomatoes with green chilies (drained)
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup sweet corn (drained)
  • 1 large jalapeño (seeded and finely diced)
  • 2 green onion (sliced)
  • 1 tbsp taco seasoning
  • 3 tbsp cilantro (chopped)
  • 2 tbsp butter (melted)
  • 1 loaf French bread or baguette (sliced)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the cream cheese, sour cream, shredded Mexican cheese, and taco seasoning. Mix well until the mixture is smooth and creamy.

Step 3

Gently fold in the diced tomatoes with green chilies, black beans, sweet corn, jalapeño, and cilantro.

Step 4

Transfer the mixture to an oven-safe baking dish and spread it out evenly.

Step 5

Cover the dish with aluminum foil and bake for 15 minutes.

Step 6

While the dip is baking, brush the slices of French bread or baguette with melted butter and place them on a baking sheet.

Step 7

After the dip has baked for 15 minutes, remove the foil and sprinkle some extra shredded Mexican cheese on top. Return the dish to the oven, uncovered, for 5 additional minutes or until the cheese is melted and bubbly.

Step 8

At the same time, place the bread slices in the oven and toast them for 5-7 minutes or until golden brown.

Step 9

Remove the dip and bread from the oven. Garnish the dip with sliced green onions and a sprinkle of fresh cilantro.

Step 10

Serve the warm dip alongside the toasted bread and enjoy immediately.
